How do I lock my lost AirPods Pro 3?

You're missing AirPods are already "locked" to your Apple Account. Unless you remove them from your account, no one else can use them ... even if they try resetting them.
Rudegar already provided you with the Apple Support link on how to place them in "Lost Mode." This mode, should you choose to use it, allows you the opportunity to add contact information for the person that finds them to contact you. However, if you feel that they may have been stolen instead, then I strongly suggest that you don't use this mode.
