Record a call without announcing to the caller that you are recording the call

You don't. At least not with the feature that's part of iOS 18.1. You can see if you can find a third party app that does what you want. Be aware, however, that most of them use three-way calling to record your calls. Do you really want a company about which you know nothing holding recordings of your calls?

In most US states and world countries it is illegal to record a call without notifying the caller.
