Individual e-mails – especially ones containing just text – don't usually take up much space.
A long text-only e-mail – the equivalent of a typed page – might contain 2,000 characters on it. A gigabyte is one billion bytes. So you would need to delete 500,000 such e-mails to free up one gigabyte – assuming your phone was caching copies of all of those e-mails in local storage.
It's normally things like photos, videos, TV shows, music, and apps (especially games) which eat up lots of storage space – and which you might have to delete or offload to free up appreciable amounts of storage space.
