In Numbers, the Help Menu is a good place to start.

The Numbers Help item will take you to the Numbers User Guide.

I find Formulas and Functions Help useful too.

In a Numbers document, click on a table cell and type =

That brings up the helpful Function Browser

Another useful resource is the Template Chooser (Menu > File > New) with excellent examples of how Numbers works.
