Why is my iPhone 16 Pro screen so sensitive? Icons start to wiggle just from picking up the iPhone. Is there something I need to change in Settings? Don’t want to accidentally delete my apps.

Lock the screen before you put the phone down. That way, when you pick it up, it won't be possible to set the icons wiggling.
Go to accessibility > Touch > Haptic Touch > Slow
