For the last month on and off my iPhone SE keeps dropping WiFi (especially at night) I have reset the phone, made sure it was full updated and reset the network several times and it makes no difference. I’m at a loss how to fix it, it’s not the router and every other device has no problem connecting and staying connected. Its getting frustrating and there’s nothing wrong with the phone otherwise.

Are you using the phone for anything when it loses Wifi? If the screen is locked and the phone is not being used for anything, Wifi is stopped until you open the phone to use it. If the phone is plugged in to charge, Wifi doesn't drop, even if the screen is locked. Could this be what you're seeing?

I can interpret that in two ways: that you’re not currently using a VPN, or that a VPN app is not installed. If a VPN app is installed but not currently in use, try removing the app entirely, restarting, and testing again.
By chance, do you use a VPN on your iPhone? Also, can you explain when your iPhone is losing Wifi? Are you using the phone for anything, when Wifi drops?
No not using a VPN, the phone loses WiFi randomly but I notice it more in the evening
Just normal usage using the internet or listening to music the phone randomly drops the WiFi
