The time typace on my Mac OS Sonoma menu bar suddenly changed into grey, like fade. ONLY the time. The whole bar is still white to match a black desktop. I have tried everything and can't understand why is this happening. See screenshot and please advice.

That means you have enabled Do Not Disturb. Option-clicking the clock toggles it on and off.
