I am using long press key to type characters in my language. What I noticed is that one character is missing: the letter d with a stroke, Unicode U+0110 and U+0111.
How do I add this character as an option to the long press of the letter d?

My Sonoma has Ð when I press and hold D. đ is not there for long press d, instead ð. There's no way to fix that, you have to ask Apple via
Perhaps create a text replacement, ðð to produce đ
Which keyboard layout is this? We can't know unless you tell us, and it is crucial to determine which keys produce which characters.
US keyboard.
PS On ABC Extended, option L then the base letter will give you the stroked d's.
