Apple Watch dies when reconnecting to wifi after/during workout

My Apple Watch Series 6 has started shutting down straight after a work out and won't turn back on unless on the charger. The screen suggests there's less than 10% battery but once on the charger this jumps straight back up to the correct battery % (which would typically be 80%+ when working out after an overnight charge).

The watch seems to die when reconnecting to my home wifi and this morning actually shut down mid-workout as I ran past my house and it must have pick up the wifi signal.

I've tried erasing the watch and setting up as new but this hasn't fixed the issue. It's running WatchOS 11.1.

Anyone had this issue and managed to resolve it?

I’m not so sure it is to do with wifi now as I completed a workout today nowhere near home or where there would be a known wifi network and once again when the workout ended the watch died.

Initially it wouldn’t boot - got the low battery / need to charge message. Then on a second attempt it did boot and showed 10% battery.

I’ve had the watch my wrist for the past 3 hours and the battery is still on 10%. So it seems like there’s an issue with the watch getting an accurate battery reading when a workout ends which is causing it to crash/reboot.
