Make your iPhone your own

I've been looking for a way of getting my photos and folders back the way they were in IOS17? Apple have a page called 'Make your iPhone your own' - the irony being, until Apple resorted everything to how THEY'VE decided THEY want it, it WAS my own. (Same with the previous camera features...)

Is there any way of making it my own again? I don't want gimmicks, utilities, music added to photos (that can't even be deselected!!!!), featured content and holiday events. I'd just like the order, and sub folders I already created as Apple previously advised and have now erased - smh

Rather than working against users, would it help if they advised users of organisational features and tools being removed (or advised on those replacing them, or alternative apps) before getting folks to upgrade and lose all their files and folders and having to start all over again reordering 10 year old photos to the present day??
