Color Management with Epson printers (or maybe all printers now??), OS15

I bought an Epson 8500 a year ago & was able to find & use color management settings. Then I realized that preferences were not being saved, came to this community & found lots of people with similar issues. Then the color management aspect 'vanished'. I can't remember if I had done an Epson or a Mac update but I was on OS 13 I believe & it seems that Apple was not supporting Epson printers sufficiently. After tearing my hair out & getting no joy from Apple, I left it. Now a year later I am on OS 15.1.1, my Epson 8500 is UTD with drivers etc - & still no sign of color management. In fact it now looks as though my Brother laser printer also no longer have color management.

Any thoughts, help??? I have googled & can't seem to find anything relating to current times.
