Confirm you have canceled any subscription automatic renewal (if you simply delete an app this does not cancel subscriptions):

Notes:
• "If you signed up for a free or discounted trial subscription and you don't want to renew it, cancel it at least 24 hours before the trial ends."
• Deleting an app does not cancel a subscription.
• An existing subscription will normally continue until the end of its term and may then renew automatically. Stopping automatic renewal is effectively canceling it. "If you don’t see Cancel Subscription, then the subscription is already canceled and won't renew." The "Expires" date means the current subscription will just run until then. Note special conditions for some countries: About canceling subscriptions in Germany, Israel, South Africa, or Türkiye - Apple Support

How did you start this subscription exactly?
You posted originally in the Apple Pay forum, if you used Apple Pay on a website to start the subscription, then you need to contact the merchant / website directly and request the refund with them.
If you downloaded and App from the App Store to an Apple Device, and it started a subscription, then Apple Pay has nothing to do with it.
You can find and cancel the subscription by following the steps in the support document linked below.
