As I move right, other columns slide under column 1, when I would rather column 1 slide left and only see rows to the right of column 1.

Select the table, tap the "brush" icon" (top of the screen) to display the Format options, tap the "Table" tab, then tap "Headers & Footers" and turn off "Freeze Columns".
