I used to download licensed movies from itunes and they were one file only. Now when I download movies from Apple TV, they are multiple files in a folder. Is this the way of the future or is there a problem with my set up?

It is not a fault in your setup. It is designed that way, and implemented for Store/subscription downloads since macOS Catalina (for HDR/surround sound)/macOS Big Sur (for all new downloads).
HLS media (.movpkg) as format in this manner was even developed by Apple back in the Mac OS X Leopard days.
One downside is that it breaks Home Sharing of files in this format (they’re not even shared).
