I recently installed an update and my icon colors have changed. The photo gallery is now black. The wallpaper resets itself every second. I tried changing them and restarting the phone, but the result is still the same.

Your icons are in Dark mode and need to be changed to Light mode. Long press a blank are of your Home Screen until you enter jiggle mode. Tap edit in upper left corner. Tap Customize. Editor slides up from bottom of screen, select Light mode.
