I have Automatic Updates turned off for iOS update on my iPhone but Apple updated my phone to 18.1.1 anyway. Not cool. Can I take it off. Or Apple can send me a new phone

iOS 18.1.1 had security updates and if you had Automatic Security Updates enabled, it would have been updated automatically.
iPhone > Settings > General > Automatic Updates > disable rose updates you don’t want. But understand, not installing security updates may put your information at risk
