I might buy a new ipad pro 11” m4 vs Mac Air laptop and use of multiple monitors.

I like the cross functionality of laptop but want something to take to class and write notes that heavy on calculus and algebra. I was considering to buy a iPad Pro 11” m4, as I heard it works well with notes using the pen. However curious if it can work with switch there operates multiple monitors, keyboard and mouse? In since when I plug in to the switch it operates as a laptop would?

iPad supports connection of a single external monitor - either mirroring the iPad screen, or for iPad models that support iPadOS Stage Manager (such as the iPad Pro), as an extended desktop.

An iPad with an M-series CPU supports a single external display of up to 6K resolution. With Stage Manager active, the external display is independent of the iPad screen - and as such, in combination with the iPad screen, effectively provides a dual monitor configuration.

You should note that iPadOS Stage Manager does not support connection of two external monitors.

Using a KVM Switch with your iPad might be problematic.
