Recent updates have removed the thick white (very clear) country borders and replaced with thin brown (barely visible) lines.
Can this be changed?!!

This cannot be changed as of now. If you have trouble seeing these types of lines often, just:
Go to Settings > Accessibility > Display & Text Size.
Turn on Increase Contrast.
You can also tell Apple directly about this by submitting feedback on the Apple feedback page.
