How do we get rid of the new Mail "categories." There seems to be way of having all mail go into "Primary," and it's real, real annoying having to review all the other catergories to see what the program has put in them, and then manually, one-by-one, have to reclassify them. Feh!

Go to the top right of the screen. Press on the 3 dots and select 'List View'. That will sort it.
But it still only shows mail messages for 1 week. Then my next messages are from 2015. There’s none I’ve left in my inbox from in between those years. Any idea how I get those back?

You are a saint Walter. I was going crazy manually re-categorizing each message.
I just love it when the folks smarter than me "fix" something that was not broken.
