I have two subscriptions - Apple News+ and Apple TV+. I set up Family Sharing. Now both subscriptions are shown as “shared.” But I only want to “share” Apple News+. How do I stop “sharing” AppleTV+ without canceling my subscription?

If you're using an AppleTV (the hardware), you can set up individual profiles.
Add or remove user profiles on Apple TV - Apple Support
All sharable subscriptions are shared. There is no granular control.
