After the 18.1 update strangely I was having eSIM failure too often. So did a network reset and restored factory settings - LO! The entire cellar/mobile service options is missing. I cannot add or remove a eSIM. When taken to apple service centre they say got change motherboard.

Have you tried contacting your carrier? They would be the ones in charge of your eSIM.
I really do not understand who is playing games. At Apple centre they ran the diagnostics and said HW issue ! All issues started with a 18.1 software update and we started getting a series of eSIM failure with no connectivity. Apple icare said they will restore OS through their Systems - no use. The mobiles services was still disabled.

Yes did ! They say it’s apple’s problem. At Apple centre they say hw problem and motherboard to be changed !
The motherboard and your eSIM are not directly related. Even so, Apple cannot help you with your SIM issues.
