I downloaded an app then I held down and hit remove from home screen. But now I can only access it in App Store and it just says open it doesn’t give me a delete option.

It is in your App Library. Swipe all the way to the left on your screen and tap in the search field to view them alphabetically or search for it.

Apps can be hidden in a special Hidden Apps folder in the App Library as well.
