The iOS/iPadOS Mail App can use defined rules for email directly to your iCloud Mail. For other mail providers, you will have to investigate the options available for sorting received email at the provider's mail server.
Perhaps you have updated to iPadOS 18 - and refer to the new mail categorisation feature? This feature is currently not available for iPadOS - and is currently only available with iOS 18.2 for iPhone.

This so-called "categories" systems seems terribly complicated rather than a simple process of sorting incoming email into folders that are labelled with the senders name (or any other naming the user wants). Didn't Apple email have the feature of setting up "smart mailboxes" that would allow that to happen?
