Spoken like true HP support. It's Apple's fault (which it is not).
First, update your Sonoma v14.7.1 to v14.7.2. If Software Update only offers Sequoia v15.2, look further down on that screen and see if it has a link for another update is available. That link will be the ability to update Sonoma (and probably Safari), but not upgrade you to Sequoia.
In reality, if you installed HP printer software from any CD/DVD that came with that "new" printer, it was already outdated, and you need to visit the HP site for that specific printer model and get the current printer driver for macOS 14. Once you install them, you will need to remove and re-add the printer in System Settings > Printers & Scanners panel and choose those new drivers. If this is not a hardware issue or a bad cartridge, you should be able to print chroma instead of monochrome.
