Unauthorised App auto updates

Hey Apple. Why did all my apps update on my iPhone when I explicitly have manual updates and auto update switched off?

How can I restore the old version of an app on my device? It’s neither the develoepr’s nor Apple’s right to control versions on customers devices.

My best guess is that I inadvertently tapped "Update All" in the App Store. As a serious, irreversible action, Update All really needs at least a confirmation dialog.

How can I resolve automatic app update issues on iPhone SE? I found out I had 3 apps that hadn’t updated in a while even though I have “Automatically install new app updates” on.
