Can I change the cellular plan on my Apple Watch SE?

my partner got me a new watch and bought it under his plan. i have a different plan under my phone so when i try connecting it, the watch automatically tries to connect to my phone's plan. is there a way to go about this? was my partner supposed to get a sim? should i reconnect it but use his phone and tap the “setting up for someone” option?

I suggest starting over with the watch. Unpair it from your partner's iPhone. Then use your iPhone to set up the  Watch using your cellular plan. There is a step in the set up process to add a cellular plan to the watch. Your cellular service provider must support  Watches.
