I try to copy some paragraphs from my pdf in preview mode, the result is always bad. with a lot of space and line breaks. someone can help?

It may be that Adobe thinks what you have is an image, and it is trying valiently to OCR it and fails. Get Adobe Acrobat Pro. It will handle stuff like this far better than Preview.
Sorry I don't understand that language but since you've said those dots and hyphens are changed, and it's normal. They will be recognized and auto-generated in Word, but in PDFs, they are just characters. I found they are normal in the content you pasted but the line breaks are changed, which is also normal when copying from a PDF. Characters in PDF are located by their location and they are not line-based or word-based.
Same problem if you copy to Pages or TextEdit?
The Preview application uses the open source Adobe PDF commands.
Now, did you use your Mac's System settings for picking the language of the Mac to change to Hebrew, and reboot? It will make everything operate in Hebrew on the Mac.
