Adding a birthday on the contacts page is not saving -- every time I add a new address it goes away as soon as I hit "done"

That means that you are syncing new entries to an email account that does not support Birthdays. Go to Settings/Apps/Contacts and change the Default to an email type that does support birthdays; best choice would be iCloud.
