I updated my macbook to Monterey and now my Final Cut won't work. The version I have is too old for Monterey and the version on the app store it's too new! Where can I find the FCPX that goes with Monterey 12.7?

You are looking at the wrong place. Follow Tom's advice: click on your account at the bottom left. Find FCP amongst your purchases - NOT searching the App Store at large.
It should say "update".
If it also says "open" there:
1) Move FCP to the trash (don't empty it yet)
2) Locate FCP amongst your purchases, as above, and click the download icon. As Tom said, you will be warned that the current version is not compatible, and offered to get the most recent for your OS.

Go to the App Store. Click the button with your name in the lower left. That will take you to the Purchased page. Find FCP. It will let you download the last version that works on your Mac.
Click on your name at the bottom left corner and scroll down the window on the right to find the app you want to update.
It won't let me download anything. There's not an update option. I get the message you can see on the screenshot attached. As you can see FCP requires macOS 14. But I can only get up to Monterey (12.7).
