Not possible with Apple's keyboard. Check out some from the app store -- Swiftkey, Bullkey, Number Row Keyboard, etc.

Tap the 123 key to get the numeric input keyboard.

If you want some other keyboard layout, you’ll need to install a third-party keyboard from the app store.
