As suggested by Lawrence Finch, are you able to use the iPhone without activating your Carrier? If no, there could be a deeper issue.

Try this -->  If you can't update or restore your iPhone or iPod touch. You can put your iOS device in recovery mode, then restore it using your computer.

To be able to use any SIM across the globe you must have "No SIM Restriction" against Network Provider Lock. Please refer to the pic below.

If your phone is carrier locked that should not prevent you from using it for any other purpose. You can restore the phone to factory settings and start over→Restore your iOS device to factory settings - Apple Support. That will remove the eSIM and let you set up the phone as new, then restore your backup.

If you have a way to reload the correct carrier eSIM, then Settings > General > Reset offers another potential way:

You mention eSIM, but that screenshot references an installed SIM.

If this iPhone 16 does have a SIM slot, remove the installed SIM and test again.
