before the ios18 update changed layouts of apps including photos, you used to be able to see how many things you had in your camera roll under albums and stuff
but now you can’t see anything and it’s annoying me because just show me my total amount 💔
You can see the total amount still. When you open the app look right under Photos in the top right corner. It should say for example 4,916 Items (this is the number I see on mines).

If by "camera roll" you mean only pictures you have taken with your iPhone camera and no other pictures (e.g. pictures synched from Mac) then you can't any more. The Recents/Camera Roll which used to only show pictures taken with the iPhone is no longer available. You can give feedback to Apple about it here
