How do I remove a updates from iPhone updates

Personally, I would not recommend it to another user, or even consider it as an acceptable answer, but that is my opinion and I refrained from mentioning it in my previous post.

You can shut off Automatic Updates by going to Settings > App Store > App Updates.

You'll have to use manual app updating and remember not to tap on that one. Read How to manually update apps from the App Store - Apple Support

The update is not a layer on top of the old app that can be removed, it is a complete app with a different version number that is installed and the previous one is deleted. The App Store will only have the latest version of the app for your device and you cannot revert to a previous version.

Since, the developer recently updated the app, they are still active, so if they are not responding to your emails, I would write a review for the app in the App Store and express your concerns. Sometimes developers will respond much quicker when your post is visible to others who are looking to download the app.
