No.

If you saw something like that on TikTok, it has already been debunked and is just another conspiracy theory that users post in order to get people directed to their account and increase viewership so it appears on others feeds.

AirDrop would let someone send something to you – not take something from your device (unless you handed someone your device, and they were using AirDrop to send something from it).

Note that if what they sent to you was a scam message, falling for the scam could help them to commit identity fraud against you, or to otherwise rip you off. For instance, a scammer could AirDrop you a Web site link which would cause Safari to take you straight to a Web site that put up a pop-up dialog claiming that your phone was infected by 67 Trojan viruses and directing you to install a (worthless) app, or to call some phone number (that didn't belong to technical support, but to criminals).

Apple Pay supports contactless payments, but I believe that you would need to hold your phone very close to a reader, and then take some action on your phone to confirm that you wanted to make a payment.

Criminals couldn't just walk by you and surreptitiously read the debit/credit card information out of your Wallet.
