Apple discontinued the iPod lineup a few years ago. You can try checking sites such as eBay or Facebook Marketplace, or stores near you such as Authorized Retailers. Watch out for scams though.

As others have pointed out, there is no iPod touch (8th generation). MacTracker indicates that the iPod touch (7th generation) had a 4" screen; came with 32, 128, or 128 GB of storage; had an A10 Fusion chip with 2 GB of RAM, and was not able to update past iOS 15.
You could probably buy an unlocked iPhone from Apple, never sign up for cellular phone service, and use it as an "iPod touch." Unfortunately, you would be paying for the cellular phone hardware even if you never used it.
