I will be working, or in the middle of listening to a podcast or not using MacBook at all, and voice memos will suddenly start playing for no reason. How can I stop this? Thanks!

Never heard of such a thing before...
The current stable release of Sequoia including bug fixes, security updates is macOS 15.2 — I would start there.
