Recently I heard that some organizations could detect APPLE devices though the signals sent by bluetooth even power off, which should be used in Findmy. Is that real? And if so, what should I do to avoid such things.

FindMy can be used to locate your device even when it is off, but that does not mean some company is getting any personal information about you or your device. There is nothing to avoid and that is how the service is supposed to work.

Safety and security are a continuum, and there's no one right or one best answer there. Different people make different choices and different trade-offs.
First, about Find My and privacy: Apple goes to some effort to ensure the Find My communications are private.
Apple also offers a service where iPhone can be tracked when powered off, which is probably what you're reading about. That, or potentially a presentation from CCC last month.
As for other tracking...
Cellphones can fundamentally be tracked, and US carriers have routinely resold location data.
There are add-on apps that also resell location data, unfortunately.
Apple and most other mobile devices do chatter on Bluetooth. We're largely swimming in Bluetooth chatter. Want some examples of this chatter? Load the LightBlue app, and scan yourself, and scan areas you are located in.
We're also often traveling with RFID tags, with TPMS monitoring in vehicles, as well as vehicle toll-payment transponders that can all be and variously are tracked.
The concept of "powering off" most modern mobile devices is largely fictional, too. Most mobile devices don't. They might drop into a very low-powered state, but they usually don't actually completely turn off.
Learn a little more about this, and think about your own risks and exposures and concerns, and make your decisions from there. Realize too that information on security and privacy from various sources, unfortunately, can also be very much slanted. Assuming it's not AI-generated spew.
