I have an Apple Watch 10. Connection to Airpods is hit or miss, sometimes wont connect at all. Bluetooth settings are correct. I’ve restarted the watch and re-paired the airpods. and it works once but not again after that. I shouldn’t have to restart my watch every time I want to connect my AirPods to it.

Do you have your iPhone near you when you want the AirPods to connect to your watch?
If yes, did you check the auto connect option on your iPhone?
Go to Settings/bluetooth/Your AirPods name/->tap on the " i "/ -> Connect to this iPhone -> When Last Connected to This iPhone.
After that, your AirPods should always connect to the device you used last.
