I have a MacBook and recently transferred a lot of files from Dropbox to my iCloud Drive to save Dropbox charges. I have plenty of my 50gb iCloud Drive available. since I transferred the files they are slow to open and slow to amend. Looking at Finder I have no files in Documents or Desktop on my MacBook. Whilst I want to access files on other Apple devices I want a fast MacBook. How can I resolve this issue?

If you have turned on the Desktop and Documents option of iCloud Drive, your Desktop and Documents folders are listed in the iCloud section of the Finder sidebar rather than the Favorites section of the Sidebar. They still may have a local copy on your Mac even though the folders are listed in the the iCloud section. If Apple menu > System Settings > iCloud > iCloud Drive > Optimize Mac Storage is turned off, there is always a local copy of all iCloud files. If that option is on, there may or may not be a local copy.
