deleting mail from server with Mail client

previous discussions on removing email from servers once it has been loaded to Mail indicate that there should be a choice in:

Mail, settings, accounts, server settings to check a box to delete mail from server. But I see no such checkbox. Nothing under "advanced settings" either.

Server is Spectrum. Is that perhaps a choice that they do not allow?

What you are describing seems to be a setting that would be associated back when the POP3 protocol was commonly used for email. I really hope and doubt that you are still using POP3 for your email. Now that IMAP is the common protocol, what you see in a specific mailbox directly reflects what is on the mail server. If you move email to the trash locally, it is moved to the trash on the server. If you empty the trash mailbox locally, it is also done on the server.
