I tried Sunbeam and Suyu brands (also 3V), and AirTags don't seem to like them. Maybe they're too old (e.g., best used by 2012) even though the 3V cell battery tester shows a lot of high juice left, but then AirTag's Durracell battery also shows high juice left even though my iPhone tells me low battery! Confusing. :(

Yes, I would think that would qualify for them being "too old."
Basically any CR2032 brand should work as long as they do not come with a bitterant coating. Duracell, amongst a number of other brands, typically do. Actually, folks have even found workarounds with these by either wiping them with rubbing alcohol or rubbing them with fine sandpaper. I wouldn't recommend the latter.
FWIW, I currently use the Evergreen brand with no issues with my AirTags. Amazon & Walmart sell them.

NO! You want batteries WITHOUT the bitterant coating, regardless if the packaging says it works with the AirTags.
