Accessories/adapters not working with new Macbook M3

I have a few old (and albeit, off-brand) dongles and have been trying to connect my monitor and apple keyboard through the dongle(s) into the USB-C ports on my brand new macbook air M3. At one point I had a pop up ask me to accept the keyboard accessory and it worked temporarily, but once I unplugged it, I never got the pop up again. I have gone into privacy and turned off the need to ask for accessory permission. I have checked System Information and I see no changes to the Thunderbolt/USB4 tab when my accessories are plugged in.

Is this a case of outdated dongles and I should just buy a newer Apple adapter? Or am I missing something else?
