I'm sick of paying through the nose for "new" versions of my -till now- favorite Claris database application, which I will not name. Are there any similar apps that work well with MacOS 15?

It is difficult for us to recommend a database app without knowing your specific database requirements.
If the only issue is price, maybe the database app included with the free LibreOffice will work for you.
The proprietary database application in LibreOffice also requires one to install the current Java release, adding to the management complexity of this approach.
The operating system ships with SQLite3 database and one can use the free DB Browser for SQLite with it. This is no conversion utility or workalike replacement for File Maker Pro databases and user interface.
