Be aware that not all devices support iOS/iPadOS 18.x. You can find the list of compatible iPhone and iPad models here:

iPhone models compatible with iOS 18 - Apple Support

iPad models compatible with iPadOS 18 - Apple Support

If your device is capable of update to a more recent version of iOS/iPadOS than is currently installed, these support pages outline both the available methods by which the update can be performed - and troubleshooting should you experience difficulties:

If you can't update or restore your iPhone, iPad or iPod touch – Apple Support

Be aware that while an iPhone/iPad may be capable of update, in some circumstances you may need to use a computer to perform the update*. To do so, you will need access to either a Windows PC (with iTunes for Windows installed - or the more recent Apple Devices App) or a Mac (with iTunes or Finder - as appropriate for the installed version of MacOS). Ensure that your installed version of iTunes has been updated to the most recent version; the essential device drivers are included.

(*) If you don’t have access to a suitable computer of your own, that of a helpful friend or family member will suffice. Alternatively, the technicians at the Genius Bar of your local Apple Store or Apple Authorised Service Provider (AASP) will be delighted to assist.

If you have a beta profile installed, ensure this has been removed from your iPad - as, otherwise, installation of production software updates may be inhibited. This support page provides the necessary information to remove the beta from your iPad:

You should note that to install an available update, the device battery must be charged to at least 50% capacity - and/or be connected to its Power Adapter.

You do not update an iPhone 6 to iOS 15.1. That iPhone is not compatible with iOS 13 and higher.

If you want to run apps that are incompatible with the iPhone 6 – a phone introduced more than ten years ago – it is time to buy a new iPhone, preferably one compatible with iOS 18.

Your phone is telling you that it is running iOS 12.5.7 and that it is up to date. That implies that it cannot update to iOS 13 or higher and that there is no iOS 15.1 update for you. We cannot help you install an incompatible version of iOS on your phone. No matter how much you might want it, you do not have the hardware needed to run it.

If you want to run something more recent than iOS 12, you will need to get a new iPhone, preferably a recent one compatible with iOS 18 (like a 15 or 16 series iPhone).
