So I plan on removing my both my 2tb drives from my 2013 IMac and install them into my 2019 iMac.
Is this simple to do or will in need to do anything special for the new IMac system to know which drive it will boot from?

I concur with BDAqua. I have a 2019 iMac 27" and trying to open that unit would be very difficult and you may incur possible damage. I use an external and no issues.
If anything needs doing to get it to boot from the correct drive, just hold the option key on power up... USB KB preferred.
The 2019 iMac will be very difficult, I'd consider putting them in external cases...

Im comfortable opening the casing and installing new 2tb drives as I did it with my 2013. I double checked with OWC website and the 2019 opens and reseals the same way as the 2013. And yes it’s the 27” version.
