I like the music that comes with a Memory video but when I try to share the video (to other iOS users), I’m told it’s not a shareable soundtrack and I have to select music from shareable soundtracks that I’m not 💯 crazy about. Not to mention I have through the hassle of listening through various music. I pay for an Apple Music subscription so I don’t understand why I’m so limited.

I'm not sure about this, but what makes sense to me is that we have paid for the right to listen to Apple Music on our devices, but we have not paid to send it to other people. If we add "Satisfaction" to a video and send it out, Mick Jagger doesn't get paid.
Understood but then I have friends who seem to be able to use music in their Apple Music library in other platforms (eg FB reels). Plus I figured, I’m sharing / can only share the memory video with fellow iOS folks
