Is it safe to use 3rd party keyboards for letters and numbers on iPhone?

I know that if you want to display both numbers and letters on a keyboard you have to install 3rd party apps but is this safe? Giving them full access means they can see what you’re typing. I really wish Apple would give you the option, these days with passwords etc you’re constantly having to use both numbers and letters.
