I have not subscribed and yet a pop up saying my MC had an increase in balance! How are they able to get into my credit card account and show balances etc ?! A little scary!

Sounds like a phishing scam to me.
Who is “they”. Microsoft? Defender is not an Apple product. You might direct your question to Microsoft. And running Defender on a Mac is quite useless and should be uninstalled.
First, before exploring the possibilities as to what might be happening, please clarify whether or not...
a) you have installed the Microsoft Defender App on your iPad, and
b) you have a Microsoft 365 Subscription with which you access Microsoft Apps on your iPad or other computer?
That is my point, I don’t have defender installed and yet Microsoft has my credit card information!
