What happens if my Apple Watch loses connection while unpairing
I’m worried about it backing up successfully, as the watch disconnects quickly every time I connect it, and unpairing has been advised by a professional.

I would not worry about back up. There is not much data kept on the watch.
Whenever I unpair then pair it back I set up as a new watch.
The only thing I loose is my preferred settings and my watch faces.
