Apple Mail: Problem with signatures - Always at the end/bottom, How to fix?

I'll swear as a long time Mac user that there was a time when Apple Mail inserted a signature where the cursor was in the email. Now, mail always sticks signatures at the bottom of every email. I've had a look around in preferences, signatures in Mail. But, I can't find anything to stop this. Anyone know how to control this?

I've started trying to migrate away from Windows completely, so I am now answering many emails in Mail versus in Outlook on W10 machine and this problem is driving me crazy.
